Honey Sriracha Chicken, Broccoli & Sweet Potatoes Sheet Pan Dinner

Ingredients

  • 2 lbs. chicken tenders
  • 2 sweet potatoes chopped
  • 1 lb. broccoli
  • 2 Tbs. olive oil
  • 3 Tbs. honey
  • 1 Tbs. sriracha sauce
  • 1 Tbs. soy sauce
  • 1 Tbs. rice vinegar
  • salt & pepper

Instructions

  • Brush one large or two small rimmed baking sheets with olive oil.
  • Toss potatoes and broccoli with a drizzle of olive oil and salt and pepper.
  • Add them to a section of the pan. Place chicken in remaining space on the pan.
  • Whisk together the honey, sriracha, soy sauce, and rice vinegar.
  • Pour half over the chicken and turn to coat.
  • Place in a 400° oven for 20-25 minutes until meat is cooked through.
  • Pour remaining honey-sriracha sauce over everything and cook for an additional 5-10 minutes, until chicken is cooked through and sweet potatoes are fork-tender.
