- 2 lbs. chicken tenders
- 2 sweet potatoes chopped
- 1 lb. broccoli
- 2 Tbs. olive oil
- 3 Tbs. honey
- 1 Tbs. sriracha sauce
- 1 Tbs. soy sauce
- 1 Tbs. rice vinegar
- salt & pepper
Brush one large or two small rimmed baking sheets with olive oil.
Toss potatoes and broccoli with a drizzle of olive oil and salt and pepper.
Add them to a section of the pan. Place chicken in remaining space on the pan.
Whisk together the honey, sriracha, soy sauce, and rice vinegar.
Pour half over the chicken and turn to coat.
Place in a 400° oven for 20-25 minutes until meat is cooked through.
Pour remaining honey-sriracha sauce over everything and cook for an additional 5-10 minutes, until chicken is cooked through and sweet potatoes are fork-tender.
