Slow Cooker Peach Pork BBQ Sliders with Apple Coleslaw

For the pork:
- 1½ lbs. pork roast or tenderloin
- 8 oz. barbecue sauce or use homemade
- 8 oz. peach salsa
- 6-8 slider buns
For the apple coleslaw:
- ½ -16 oz. bag coleslaw mix
- 2 Tbs. chopped parsley
- 1 small apple chopped
- 3 Tbs. safflower oil
- 1½ Tbs. vinegar
- 2 Tbs. honey
- salt & pepper to taste
For the homemade bbq sauce:
- ¾ cup ketchup
- 2 Tbs. yellow mustard
- 2 Tbs. honey or brown sugar
- salt to taste optional
For the pork:
Put all the ingredients except for the buns in the slow cooker.
Cook on high 5-6 hours or low for 7-8 hours.
Shred cooked meat to serve.
For the apple coleslaw:
Stir coleslaw mix, parsley and apple together.
Put the remaining ingredients in a container with a tight fitting lid.
Give it a good shake to combine.
Pour dressing over slaw and toss.
Serve on whole wheat slider buns, or go bun-less, and serve the pork on top of the slaw.
