15-Minute Greek Pita Sandwiches

Ingredients

  • 2 lbs. meatballs frozen, or use homemade
  • 1 tomato chopped
  • 1 head lettuce chopped
  • 4-8 oz. feta
  • 6-8 pita pockets
  • ½-1 cup veggie dip

For the homemade meatballs:

  • lbs. ground beef
  • 2 cups bread crumbs Panko or whole wheat
  • 3 eggs
  • 1 Tbs. Worcestershire sauce
  • ½ small onion diced
  • salt & pepper

Instructions

  • Bake meatballs according to package directions, or use the homemade meatballs recipe below. 
  • Chop up the lettuce and tomato.
  • Once the meatballs are cooked, allow them to cool slightly.
  • Then put everything in the pita pocket.
  • Top with veggie dip and serve.

For the homemade meatballs:

  • Mix all the ingredients together in a stand mixer or by hand. If you like, add garlic, oregano, basil, parsley or other seasonings.
  • Roll into balls and bake at 350° for 20-25 minutes.
  • Cool and freeze any extra you have for future meals!

Notes

Notes: To make this a 15 minute meal, make meatballs ahead of time.
