15-Minute Crispy Black Bean Tacos with Feta-Lime Slaw

- 2 15 oz. cans black beans
- 2 tsp. cumin
- 4 tsp. olive oil
- 1 lime
- 1 bag coleslaw mix
- 2-4 green onions
- ½ cup cilantro chopped
- salt & pepper to taste
- 12-16 corn tortillas
- 4 oz. feta cheese
- hot sauce to taste
Rinse and drain the black beans.
Stir in the cumin and partially mash the beans.
In a separate bowl, combine olive oil with the juice of the lime.
Add the coleslaw mix, green onions and cilantro and toss.
Salt and pepper the slaw to taste.
Put a little olive oil in a skillet or on a griddle.
Place the tortilla on the hot griddle and add some of the black beans.
Fold the shell over the top of the beans and toast on both sides until crisped.
Remove from the griddle and add some feta cheese and slaw.
Serve with hot sauce.
