15-Minute Mediterranean Chicken Skillet

- 1½ lbs. boneless chicken
- 2-3 Tbs. olive oil
- 1 onion chopped
- ½ green pepper chopped
- 2-4 cloves garlic crushed
- 2 15 oz. cans stewed tomatoes
- 6 oz. can sliced black olives
- salt & pepper to taste
- ½ cup crumbled feta
Chop chicken into bite-sized pieces.
Heat oil over medium heat in large skillet and cook chicken until nearly done.
Add onion, green pepper and garlic.
Finish cooking until chicken is cooked through and onion is soft.
Add tomatoes and black olives.
Season with salt and pepper and heat through.
Sprinkle crumbled feta over top before serving.
