15-Minute Skillet Chicken and Dressing

Ingredients

  • 1⅓ cups milk
  • 10 oz. can cream of chicken soup
  • 1 cup frozen vegetables optional
  • 2-3 cups cooked chicken chopped
  • 3 Tbs. butter melted
  • cup chicken broth
  • 6 oz. box cornbread stuffing mix

Homemade Cream of Chicken Soup:

  • 4 Tbs. butter
  • 4 Tbs. unbleached all-purpose flour
  • ¾ cup milk
  • ¾ cup chicken broth

Instructions

  • Stir milk and soup together. Pour into skillet and heat over medium heat. 
  • Add frozen vegetables and chicken to skillet.
  • Heat thoroughly.
  • While that heats, stir butter, broth and dressing mix together.
  • When skillet is hot and bubbly, top with dressing mix.
  • Pop under the broiler in the oven for 3-5 minutes, till it begins to brown.

Homemade Cream of Chicken Soup:

  • Melt butter in a pan.
  • Whisk in flour and cook, whisking constantly, for a minute or two until golden.
  • Slowly whisk in milk and broth and bring to a boil, stirring frequently.
  • Use this in place of the cream of chicken soup in the recipe.
