Banana Chocolate Chip Breakfast Cookies

Ingredients

  • 2 cups old fashioned oats
  • 1 cup whole wheat flour
  • tsp. cinnamon
  • ½ tsp. nutmeg
  • ¼ tsp. salt
  • 1 tsp. baking powder
  • 2 large bananas mashed
  • ½ cup peanut butter
  • ¼ cup maple syrup
  • 1 egg
  • cup chocolate chips

Instructions

  • Stir together oats, flour, cinnamon, nutmeg, salt, and baking powder.
  • Stir in mashed banana, peanut butter, maple syrup, and egg.
  • Fold in chocolate chips.
  • Using a ¼ cup measuring cup, scoop onto a baking sheet.
  • Flatten the tops and bake at 350° for 15-20 minutes, until set and golden around the edges.
  • Cool completely before removing from the baking sheet.
  • Store in an airtight container.

Notes

These can be kept in an airtight container at room temperature for several days. If you prefer to freeze them, wrap individually in plastic wrap and place in a ziplock bag. Thaw on the counter overnight.
