Watermelon Salad

Ingredients

For the salad:

  • 3-4 cups spring greens or arugula
  • 1 cup watermelon cubes
  • 0z. goat cheese
  • ½ cup raspberry vinaigrette dressing

For the dressing:

  • Tbs. seedless raspberry jam
  • cup oil
  • 3 Tbs. red wine vinegar
  • salt & pepper to taste

Instructions

For the salad:

  • Toss together the salad greens, watermelon cubes and goat cheese.

For the dressing:

  • Warm the jam in the microwave for a few seconds until it become slightly melted.
  • Place all ingredients in a container with a tight-fitting lid.
  • A mason jar works well for this.
  • Shake to combine the ingredients. 
  • Pour over salad, to taste, and toss.
