Watermelon Salad

For the salad:
- 3-4 cups spring greens or arugula
- 1 cup watermelon cubes
- 1½ 0z. goat cheese
- ½ cup raspberry vinaigrette dressing
For the dressing:
- 1½ Tbs. seedless raspberry jam
- ⅓ cup oil
- 3 Tbs. red wine vinegar
- salt & pepper to taste
For the dressing:
Warm the jam in the microwave for a few seconds until it become slightly melted.
Place all ingredients in a container with a tight-fitting lid.
A mason jar works well for this.
Shake to combine the ingredients.
Pour over salad, to taste, and toss.
