Fire Roasted Tomato Sauce with Two Cheeses over Spaghetti Squash

Ingredients

  • 1 onion finely chopped
  • 4 cloves garlic minced or crushed
  • 1-2 Tbs. olive oil for sautéing
  • 15 oz. tomato sauce
  • 15 oz. fire-roasted diced tomatoes lightly drained
  • ¼ tsp. ground pepper fresh
  • 1 tsp. basil
  • 1 tsp. oregano
  • ½ tsp. thyme
  • 3-4 slices Provolone cheese diced or ½ cup shredded
  • ¼ cup parmesan

Instructions

  • Sauté the onion and garlic in the olive oil over medium heat.
  • Stir in the other ingredients and simmer about 10 minutes or until the cheeses have melted.
  • Serve over cooked spaghetti squash.
