Ham and Pineapple Fried Rice

Ingredients

  • 1 cup brown rice
  • 1 small onion chopped
  • 2 cloves garlic minced or crushed
  • 1 Tbs. vegetable oil
  • 1 cup diced ham
  • 1 Tbs. soy sauce plus extra for serving
  • 8 oz. can pineapple tidbits drained and juice reserved
  • 1 egg beaten
  • ½-1 cup frozen peas and carrots
  • salt & pepper to taste

Instructions

For stovetop rice:

  • Cook the rice according to the package directions.

For Instant Pot rice:

  • Place brown rice and 1¼ cups water in the instant pot, close the lid and seal.
  • Cook the rice for 17 minutes on high pressure, followed by a quick pressure release.

For fried rice:

  • Cook the onion and garlic in oil in a large skillet till soft.
  • Add ham, soy sauce and pineapple juice, cooking for several minutes till the ham is hot.
  • Pour the eggs into the skillet and cook, stirring frequently.
  • Add the peas and carrots and heat through.
  • Stir in the drained pineapple.
  • Add the cooked rice, stirring to combine.
  • Add soy sauce, pineapple juice, salt and pepper to taste.
