Ingredients

  • 2 heads romaine lettuce chopped
  • 1 pint blueberries
  • 1 cup pecans halves
  • 1 red onion thinly sliced
  • ½ cup blue cheese crumbles
  • ¾ lb. chicken chopped, grilled, optional
  • ¼ cup olive oil
  • 2 Tbs. plain Greek yogurt
  • 2 Tbs. balsamic vinegar
  • ½ tsp. Dijon mustard
  • ¼ tsp. garlic powder
  • ¼ tsp. salt
  • pinch black pepper

Instructions

  • In a small bowl, whisk together the olive oil, yogurt, vinegar, mustard, garlic powder, salt and pepper for the dressing.
  • In a large bowl, toss together the lettuce, blueberries, pecans, red onion, and blue cheese.
  • Top with chicken, if using.
  • Add dressing to taste.
