- 1 head romaine lettuce chopped
- ½ pint blueberries
- ½ cup pecans halves
- ½ red onion thinly sliced
- ¼ cup blue cheese crumbles
- ⅓ lb. chicken chopped, grilled, optional
- 2 Tbs. olive oil
- 1 Tbs. plain Greek yogurt
- 1 Tbs. balsamic vinegar
- ¼ tsp. Dijon mustard
- ⅛ tsp. garlic powder
- ⅛ tsp. salt
- pinch black pepper
In a small bowl, whisk together the olive oil, yogurt, vinegar, mustard, garlic powder, salt and pepper for the dressing.
In a large bowl, toss together the lettuce, blueberries, pecans, red onion, and blue cheese.
Top with chicken, if using.
Add dressing to taste.
