Strawberry Mixed Greens Salad

Ingredients

  • 12-16 cups mixed greens
  • 1 pint strawberries halved
  • 2 large cucumbers coin sliced
  • ½ cup crumbled goat cheese
  • ½ cup walnuts
  • ¾ lb. chicken chopped grilled, optional
  • ¼ cup olive oil
  • 3 Tbs. cider vinegar
  • 1 Tbs. dried minced onion
  • salt and pepper to taste

Instructions

  • Whisk together the olive oil, vinegar, onion, salt and pepper to make dressing.
  • In a large bowl, toss together the greens, strawberries, cucumbers, cheese, and walnuts.
  • Top with chicken, if desired.
  • Add dressing to taste.
