- ⅓ cup dried cranberries
- 1 cup broccoli florets chopped
- 2 Tbs. pumpkin seeds
- ⅓ lb. chicken grilled & diced
For the dressing:
- 3 Tbs. olive oil
- 1 Tbs. lemon juice
- ½ tsp. Dijon mustard
- salt & pepper to taste
For the salad:
Toss together the spinach, blueberries, cranberries, broccoli, and pumpkin seeds.
Top with grilled chicken, if desired.
