Ingredients

For the salad:

  • 2 bags baby spinach
  • cups blueberries
  • ¾ cup dried cranberries
  • 2 cups broccoli florets chopped
  • ¼ cup pumpkin seeds
  • ¾ lb. chicken grilled & diced

For the dressing:

  • 6 Tbs. olive oil
  • 2 Tbs. lemon juice
  • 1 tsp. Dijon mustard
  • salt & pepper to taste

Instructions

For the salad:

  • Toss together the spinach, blueberries, cranberries, broccoli, and pumpkin seeds.
  • Top with grilled chicken, if desired.

For the dressing:

  • Whisk together the ingredients for the dressing and add to the salad, to taste.
