Slow Cooker Mediterranean Chicken

- 3 chicken breasts boneless
- 15 oz. fire-roasted diced tomatoes
- 15 oz. stewed tomatoes
- 6 oz. tomato paste
- 1 onion sliced
- 4 oz. sliced black olives
- 1 clove whole garlic bulb peeled but left whole
- salt & pepper to taste
- 12-16 oz. favorite pasta or grain cooked as desired
- ½ cup feta or parmesan cheese crumbled optional
Place the chicken breasts in the bottom of the slow cooker.
Add the other ingredients on top and stir to combine them a bit.
Cover and cook on high for 5-6 hours or low for 7-8 hours.
Serve over your favorite pasta or rice and top with Parmesan cheese if desired.
