Slow Cooker Mediterranean Chicken

Ingredients

  • 3 chicken breasts boneless
  • 15 oz. fire-roasted diced tomatoes
  • 15 oz. stewed tomatoes
  • 6 oz. tomato paste
  • 1 onion sliced
  • 4 oz. sliced black olives
  • 1 clove whole garlic bulb peeled but left whole
  • salt & pepper to taste
  • 12-16 oz. favorite pasta or grain cooked as desired
  • ½ cup feta or parmesan cheese crumbled optional

Instructions

  • Place the chicken breasts in the bottom of the slow cooker.
  • Add the other ingredients on top and stir to combine them a bit.
  • Cover and cook on high for 5-6 hours or low for 7-8 hours.
  • Serve over your favorite pasta or rice and top with Parmesan cheese if desired.
