Slow Cooker Mediterranean Chicken

Ingredients

  • 1-2 chicken breasts boneless
  • ½ can fire-roasted diced tomatoes
  • ½ 15 oz. can stewed tomatoes
  • ½ 6 oz. can tomato paste
  • 1 small onion sliced
  • 2 oz. can sliced black olives
  • 1 clove garlic peeled, but left whole
  • salt & pepper to taste
  • 6-8 oz. favorite pasta or grain cooked as desired
  • ¼ cup feta or parmesan cheese crumbled optional

Instructions

  • Place the chicken breasts in the bottom of the slow cooker.
  • Add the other ingredients on top and stir to combine them a bit.
  • Cover and cook on high for 5-6 hours or low for 7-8 hours.
  • Serve over your favorite pasta or rice and top with Parmesan cheese if desired.
