Slow Cooker Mediterranean Chicken

- 1-2 chicken breasts boneless
- ½ can fire-roasted diced tomatoes
- ½ 15 oz. can stewed tomatoes
- ½ 6 oz. can tomato paste
- 1 small onion sliced
- 2 oz. can sliced black olives
- 1 clove garlic peeled, but left whole
- salt & pepper to taste
- 6-8 oz. favorite pasta or grain cooked as desired
- ¼ cup feta or parmesan cheese crumbled optional
Place the chicken breasts in the bottom of the slow cooker.
Add the other ingredients on top and stir to combine them a bit.
Cover and cook on high for 5-6 hours or low for 7-8 hours.
Serve over your favorite pasta or rice and top with Parmesan cheese if desired.
