Instant Pot Mediterranean Chicken

Ingredients

  • 3 chicken breasts boneless
  • 15 oz. can fire-roasted diced tomatoes
  • 15 oz. can stewed tomatoes
  • 6 oz. tomato paste
  • 1 onion sliced
  • 4 oz. can sliced black olives
  • 1 clove garlic peeled but left whole
  • salt & pepper to taste
  • 12-16 oz. favorite pasta or grain cooked as desired
  • ½ cup feta or parmesan cheese crumbled optional

Instructions

  • Place all ingredients, except feta and pasta, in the pressure cooker.
  • Set to high pressure for 14 minutes.
  • Do a quick pressure release.
  • Serve over your choice of grain or pasta with crumbled feta or parmesan cheese.
