Caesar Salad

Ingredients

For the Salad:

  • 2 heads romaine lettuce
  • ½ cup parmesan cheese freshly grated
  • ½ tsp. Italian seasoning
  • ¾ lb. chicken breast grilled & diced, optional

For the Dressing:

  • 4 cloves garlic minced
  • 1 Tbs. Dijon mustard
  • 1 Tbs. vinegar
  • Kosher salt and pepper to taste
  • 2 Tbs. mayonnaise
  • ½ cup olive oil
  • ½ tsp. lemon juice

Instructions

  • Add the garlic, mustard, vinegar, salt, and pepper to a blender or food processor and blend until well combined.
  • Add the mayonnaise and blend again until well combined.
  • With the blender or food processor running, add the olive oil in a steady stream.
  • Stir in the lemon juice and then taste and adjust the seasonings if needed.

Notes

For the salad: Toss the lettuce with enough dressing to coat and then toss with Italian seasoning, parmesan cheese, and chicken breast, if desired.
