- 1-2 chicken breasts boneless
- ½ 15 oz. can fire-roasted diced tomatoes
- ½ 15 oz. can stewed tomatoes
- 3 oz. tomato paste
- 1 small onion sliced
- 2 oz. can sliced black olives
- 1 clove garlic peeled but left whole
- salt & pepper to taste
- 6-8 oz. favorite pasta or grain cooked as desired
- ¼ cup feta or parmesan cheese crumbled optional
Place all ingredients, except feta and pasta, in the pressure cooker.
Set to high pressure for 14 minutes.
Do a quick pressure release.
Serve over your choice of grain or pasta with crumbled feta or parmesan cheese.
