Ingredients

  • 2 heads romaine lettuce
  • 1 cup black olives sliced
  • ½ red onion sliced
  • 3-4 tomatoes seeded and diced
  • cup sunflower seeds
  • 1 cup feta crumbled
  • ¾ lb. chicken grilled and sliced, optional
  • 4-8 Tbs. olive oil to taste
  • 4-8 Tbs. balsamic vinegar to taste

Instructions

  • In a large bowl, toss together the lettuce, olives, onion, tomatoes, sunflower seeds, and feta.
  • Saute chicken in olive oil and add to salad (optional)
  • Dress to taste with olive oil and balsamic vinegar.
