- 1 head romaine lettuce
- ½ cup black olives sliced
- ¼ red onion sliced
- 1-2 tomatoes seeded and diced
- 3 Tbs. sunflower seeds
- ½ cup feta crumbled
- ⅓ lb. chicken grilled and sliced, optional
- 3-4 Tbs. olive oil to taste
- 3-4 Tbs. balsamic vinegar to taste
In a large bowl, toss together the lettuce, olives, onion, tomatoes, sunflower seeds, and feta. Saute chicken in olive oil and add to salad, if using. Dress to taste with olive oil and balsamic vinegar.
