Ingredients

For the salad:

  • 1 head romaine lettuce
  • ½ cup frozen corn thawed
  • 1 red pepper diced
  • 1 cup cherry tomatoes halved
  • ½ 15 oz. can black beans drained and rinsed
  • ½ cup cheddar cheese shredded
  • 1 avocado sliced
  • lb. chicken breast grilled

For the dressing:

  • ½ cup Greek yogurt
  • ¼ cup cilantro
  • 1 Tbs. lime juice about ½ lime
  • ¼ tsp. salt

Instructions

For the salad:

  • Toss together the lettuce, corn, red peppers, cherry tomatoes, black beans, and cheese.
  • Top with avocado slices and chicken, if using.
  • Dress salad, to taste, and serve.

For the dressing:

  • In a blender, combine the yogurt, cilantro, lime juice, and salt.
