For the salad:
- 1 head romaine lettuce
- ½ cup frozen corn thawed
- 1 red pepper diced
- 1 cup cherry tomatoes halved
- ½ 15 oz. can black beans drained and rinsed
- ½ cup cheddar cheese shredded
- 1 avocado sliced
- ⅓ lb. chicken breast grilled
For the dressing:
- ½ cup Greek yogurt
- ¼ cup cilantro
- 1 Tbs. lime juice about ½ lime
- ¼ tsp. salt
For the salad:
Toss together the lettuce, corn, red peppers, cherry tomatoes, black beans, and cheese.
Top with avocado slices and chicken, if using.
Dress salad, to taste, and serve.
For the dressing:
In a blender, combine the yogurt, cilantro, lime juice, and salt.
