Southwest Beef Rolls

- 3 thin-cut cube steaks
- ½ cup cornbread stuffing mix
- ½ 15 oz. can stewed tomatoes
- ½ 4 oz. can diced green chilies
- ½ Tbs. chili powder
- 1 Tbs. oil
Moisten the stuffing mix with 3-4 Tbs. hot tap water.
Spread 3 Tbs. stuffing mix over one side of the steaks.
Roll up and fasten with a wooden toothpick.
Brown the beef rolls in a large skillet in a bit of oil over medium-high heat.
Add tomatoes, chilies, chili powder and ¼ cup water.
Bring to a boil.
Lower the heat and cover the skillet, simmering for 20-30 minutes or until the beef rolls are tender.
