Cajun Chicken Skillet

Ingredients

  • ¾ lb. boneless chicken cut in bite-size pieces
  • 1-1½ Tbs. olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 small green pepper chopped
  • ½ 15 oz diced tomatoes with juice
  • 1-1½ tsp. cajun seasoning or to taste
  • ½ cup half and half warmed
  • ½ lb. cooked linguine
  • 2-4 Tbs. parmesan cheese for topping

Instructions

  • Heat oil in skillet and cook chicken over medium heat until nearly done.
  • Add onion, green pepper and garlic.
  • Finish cooking until chicken is cooked through and onion is soft.
  • Pour in tomatoes with their juice.
  • Add Cajun Seasoning.
  • Stir in half and half, turning the heat low so sauce doesn't boil.
  • Toss the Cajun chicken and sauce with cooked pasta.
  • Top with Parmesan, if desired.
