Carrots, Parsnips and Potatoes

Ingredients

  • ½ lb. carrots
  • ½ lb. parsnips
  • 1 ½ potatoes small
  • 1-2 Tbs. olive oil
  • Kosher salt

Instructions

  • Wash, peel and chop the carrots, parsnips and potatoes.
  • In a large bowl, drizzle olive oil over the veggies and sprinkle with salt.
  • Mix well and pour onto a large baking pan.
  • Bake at 400° for 40-45 minutes or until the veggies are tender.
