Carrots, Parsnips and Potatoes

- ½ lb. carrots
- ½ lb. parsnips
- 1 ½ potatoes small
- 1-2 Tbs. olive oil
- Kosher salt
Wash, peel and chop the carrots, parsnips and potatoes.
In a large bowl, drizzle olive oil over the veggies and sprinkle with salt.
Mix well and pour onto a large baking pan.
Bake at 400° for 40-45 minutes or until the veggies are tender.
