Ingredients

  • 2 heads romaine lettuce
  • 3 red peppers diced
  • 2 carrots coin-sliced
  • 2 cups cherry tomatoes halved
  • 1 cup cheddar cheese diced
  • 1 cup swiss cheese diced
  • 4 eggs hard boiled and sliced
  • 1 cup ham diced, optional
  • ¼ cup cider vinegar
  • tsp. honey
  • 2 tsp. Dijon mustard
  • Salt and pepper
  • ½ cup olive oil

Instructions

For the dressing:

  • Whisk together the vinegar, honey, mustard, and salt and pepper to taste. Slowly whisk in the olive oil.
  • Slowly whisk in the olive oil.

For the salad:

  • Toss together the lettuce, peppers, carrots, tomatoes, and cheese.
  • Top with eggs and ham, if using.
  • Add dressing to the salad, to taste, and serve.

Notes

This dressing does contain a small amount of sweetener. When spread over several servings, the amount is very small, however feel free to omit or adjust as you like.
