- 4 cups rolled oats
- 1 tsp. cinnamon
- 1 tsp. ginger
- 1 tsp. allspice
- ½ tsp. nutmeg
- ½ tsp. cloves
- 1 cup sliced almonds
- ½ cup pumpkin seeds
- ¼ cup dates chopped
- pinch salt
- 1½ tsp. vanilla extract
- ¼ cup honey
- ¼ cup coconut oil
Combine oats, cinnamon, ginger, allspice, nutmeg, cloves, almonds, pumpkin seeds, dates, and salt in a large bowl.
In another bowl, whisk together the vanilla, honey, and coconut oil.
Pour the wet ingredients over the oats and stir until evenly coated.
Spread the oats on a large baking sheet and bake at 350° about 30 minutes, until golden brown.
Store in an airtight container.
