Gingerbread Granola

Ingredients

  • 4 cups rolled oats
  • 1 tsp. cinnamon
  • 1 tsp. ginger
  • 1 tsp. allspice
  • ½ tsp. nutmeg
  • ½ tsp. cloves
  • 1 cup sliced almonds
  • ½ cup pumpkin seeds
  • ¼ cup dates chopped
  • pinch salt
  • tsp. vanilla extract
  • ¼ cup honey
  • ¼ cup coconut oil

Instructions

  • Combine oats, cinnamon, ginger, allspice, nutmeg, cloves, almonds, pumpkin seeds, dates, and salt in a large bowl.
  • In another bowl, whisk together the vanilla, honey, and coconut oil.
  • Pour the wet ingredients over the oats and stir until evenly coated.
  • Spread the oats on a large baking sheet and bake at 350° about 30 minutes, until golden brown.
  • Store in an airtight container.
