Peanut Butter Chocolate Chip Granola

- 4 cups rolled oats
- 1 Tbs. cinnamon
- 1 cup sliced almonds
- ½ cup pumpkin seeds
- pinch of salt
- 1½ tsp. vanilla extract
- ¼ cup peanut butter
- ¼ cup coconut oil
- ¼ cup maple syrup
- ¼ cup mini chocolate chips
Combine oats, cinnamon, almonds, pumpkin seeds, and salt in a large bowl.
In another bowl, whisk together the vanilla, coconut oil, maple syrup, and peanut butter.
Pour the wet ingredients over the oats and stir until evenly coated.
Spread the oats on a large baking sheet and bake at 350° about 30 minutes, until golden brown.
When cool, toss with mini chocolate chips.
Store in an airtight container.
