Peanut Butter Chocolate Chip Granola

Ingredients

  • 4 cups rolled oats
  • 1 Tbs. cinnamon
  • 1 cup sliced almonds
  • ½ cup pumpkin seeds
  • pinch of salt
  • tsp. vanilla extract
  • ¼ cup peanut butter
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • ¼ cup mini chocolate chips

Instructions

  • Combine oats, cinnamon, almonds, pumpkin seeds, and salt in a large bowl.
  • In another bowl, whisk together the vanilla, coconut oil, maple syrup, and peanut butter.
  • Pour the wet ingredients over the oats and stir until evenly coated.
  • Spread the oats on a large baking sheet and bake at 350° about 30 minutes, until golden brown.
  • When cool, toss with mini chocolate chips.
  • Store in an airtight container.
