Slow Cooker Ranch Meatballs and Pasta

Ingredients

For meatballs and pasta:

  • 12 oz. penne pasta
  • 2 lbs. frozen meatballs or use homemade
  • 1 onion diced
  • 2 Tbs. vegetable oil
  • 15 oz. diced tomatoes canned
  • 10 oz. diced tomatoes and green chilies canned
  • 8 oz. tomato sauce
  • 1 oz. ranch dressing mix
  • 1 cup cheddar cheese shredded

For homemade meatballs:

  • 2 lbs. ground beef
  • 2 eggs
  • 1 large onion
  • cup plain breadcrumbs

Instructions

For meatballs and pasta:

  • In the slow cooker, mix together the onion, tomatoes, tomato sauce, and ranch dressing mix.
  • Stir in meatballs
  • Cook on high for 4-5 hours or on low for 6-8 hours.
  • Serve over penne, topped with cheese. 

For homemade meatballs:

  • Mix together the ground beef, egg, shredded onion and breadcrumbs.
  • Roll ground beef mixture into 1-1½ inch balls.
