Granola with Dates and Raisins

Ingredients

  • 4 cups old fashioned oats
  • 1 Tbs. cinnamon
  • 1 cup sliced almonds
  • ½ cup pumpkin seeds
  • ¼ cup chopped dates
  • ¼ cup raisins
  • pinch salt
  • tsp. vanilla extract
  • ¼ cup honey
  • ¼ cup coconut oil melted

Instructions

  • Stir together oats, spices, almonds, pumpkin seeds, dates, raisins, and salt in a large bowl.
  • In a smaller bowl, whisk together the vanilla, honey and coconut oil.
  • Pour the wet ingredients over the oat mixture and stir to evenly coat.
  • Spread the oats out on a large baking sheet and bake for 350° for 30 minutes, until golden brown.
  • Store in an airtight container.
