Granola with Dates and Raisins

- 4 cups old fashioned oats
- 1 Tbs. cinnamon
- 1 cup sliced almonds
- ½ cup pumpkin seeds
- ¼ cup chopped dates
- ¼ cup raisins
- pinch salt
- 1½ tsp. vanilla extract
- ¼ cup honey
- ¼ cup coconut oil melted
Stir together oats, spices, almonds, pumpkin seeds, dates, raisins, and salt in a large bowl.
In a smaller bowl, whisk together the vanilla, honey and coconut oil.
Pour the wet ingredients over the oat mixture and stir to evenly coat.
Spread the oats out on a large baking sheet and bake for 350° for 30 minutes, until golden brown.
Store in an airtight container.
