Pear, Pecan & Pomegranate Salad

For the salad:
- 12-16 cups mixed greens
- 2 pears chopped
- ¾ cup pomegranate arils
- ¾ cup chopped pecans
- ½ cup crumbled goat cheese
- ¾ lb. grilled chicken breast diced, optional
For the dressing :
- 3 Tbs. all fruit seedless raspberry preserves
- ⅔ cup olive oil
- ⅓ cup red wine vinegar
- salt & pepper to taste
For the salad:
Combine the greens, pears, pomegranate, pecans, goat cheese, and chicken in a large bowl.
Add dressing to taste and serve.
For the dressing:
Melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.
Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
