Pear, Pecan & Pomegranate Salad

Ingredients

For the salad:

  • 12-16 cups mixed greens
  • 2 pears chopped
  • ¾ cup pomegranate arils
  • ¾ cup chopped pecans
  • ½ cup crumbled goat cheese
  • ¾ lb. grilled chicken breast diced, optional

For the dressing :

  • 3 Tbs. all fruit seedless raspberry preserves
  • cup olive oil
  • cup red wine vinegar
  • salt & pepper to taste

Instructions

For the salad:

  • Combine the greens, pears, pomegranate, pecans, goat cheese, and chicken in a large bowl.
  • Add dressing to taste and serve.

For the dressing:

  • Melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.
  • Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
