Ingredients

  • 2 lb. baby carrots
  • 1-2 Tbs. olive oil
  • salt and pepper to taste

Instructions

  • Toss carrots with olive oil, and sprinkle with salt and pepper.
  • Roast on a baking sheet at 425° for about 25 minutes.
