Roasted Chipotle Pork Chops with New Potatoes and Green Beans

- 6-8 pork chops boneless, thin-cut
- 3-4 small new potatoes per person
- 1 lb. green beans
- 3-4 Tbs. olive oil
- to taste salt
- to taste pepper
- to taste Chipotle seasoning
Preheat oven to 425°.
Brush pork chops with olive oil and sprinkle with chipotle seasoning.
Place on a large parchment-lined cookie sheet.
Cut potatoes in half. Snap off the ends of the green beans.
Toss in a bowl with olive oil and salt and pepper.
Add veggies to cookie sheet.
Bake for 30 minutes, or until pork chops are cooked through.
