Roasted Chipotle Pork Chops with New Potatoes and Green Beans

Ingredients

  • 3-4 pork chops thin-cut boneless
  • 3-4 small new potatoes per person
  • ½ lb. green beans
  • 1½-2 Tbs. olive oil
  • to taste salt
  • to taste pepper
  • to taste Chipotle seasoning

Instructions

  • Preheat oven to 425°.
  • Brush pork chops with olive oil and sprinkle with chipotle seasoning.
  • Place on a large parchment-lined cookie sheet.
  • Cut potatoes in half.
  • Snap off the ends of the green beans.
  • Toss in a bowl with olive oil and salt and pepper.
  • Add veggies to cookie sheet.
  • Bake for 30 minutes, or until pork chops are cooked through.
