Ingredients

  • 1-2 sweet potatoes
  • 1-2 white potatoes
  • 2 Tbs. olive oil
  • to taste salt and pepper

Instructions

  • Chop potatoes.
  • Toss with a generous drizzle of olive oil and sprinkle with salt and pepper.
  • Spread out on a baking sheet and roast at 400° for about 40 minutes, until the potatoes are tender when poked with a fork.
