Roasted Sweet Potatoes, Sliced Chicken Sausage, Kale & Fried Eggs

Ingredients

  • 3 sweet potatoes peeled and chopped into bite-sized pieces
  • 2 Tbs. olive oil
  • sea salt & pepper to taste
  • 1 lb chicken sausage coin-sliced
  • 1 bunch kale torn into pieces
  • 1 Tbs. butter
  • 6-8 eggs

Instructions

  • Toss sweet potatoes with a drizzle of olive oil, season with salt and pepper, and spread out on a baking sheet.
  • Roast at 400° for 15-20 minutes, until soft.
  • Meanwhile, in a skillet, heat a drizzle of olive oil.
  • Add the chicken sausage and kale and cook until sausage is browned and kale is softened. 
  • Stir cooked sweet potatoes in then transfer to a bowl.
  • Wipe out the skillet and return to medium-high heat. Melt butter.
  • Break eggs and slip them into the pan, one at a time.
  • Immediately reduce heat to low and cook slowly until whites are completely set and yolks are thickening.
  • Gently flip each egg over in the pan and cook until the desired doneness.
  • Season with salt and pepper.
  • Divide sweet potato mixture between serving bowls and top each serving with an egg.
  • Serve immediately.
