- 2 lbs. chicken sausage halved lengthwise
- 2 green peppers sliced
- 1 red pepper sliced
- 1 onion sliced
- 3 potatoes chopped
- 4 cloves garlic minced
- 2-3 Tbs. olive oil
- 2 Tbs. Italian seasoning
Brush one large or two small rimmed baking sheets with olive oil.
Toss peppers, onions, potatoes, and garlic with a drizzle of olive oil and Italian seasoning.
Add them to a section of the pan.
Brush chicken sausage with olive oil and place in remaining space on the pan.
Sprinkle with Italian seasoning.
