Chicken Sausage Potatoes and Peppers

Ingredients

  • 1 lb. chicken sausage halved lengthwise
  • 1 green pepper sliced
  • ½ red pepper sliced
  • ½ onion sliced
  • 2 potatoes chopped
  • 2 cloves garlic minced
  • 1-1½ Tbs. olive oil
  • 1 Tbs. Italian seasoning

Instructions

  • Brush one large or two small rimmed baking sheets with olive oil.
  • Toss peppers, onions, potatoes, and garlic with a drizzle of olive oil and Italian seasoning.
  • Add them to a section of the pan.
  • Brush chicken sausage with olive oil and place in remaining space on the pan.
  • Sprinkle with Italian seasoning.
  • Place in a 400° oven for 25-30 minutes until meat is cooked through.
