- 1 large yellow onion diced
- 2 cloves garlic minced
- 2 celery stalks diced
- 1 large red bell pepper diced
- 28 oz. can crushed tomatoes
- 3 cups chicken stock
- 2 tsp. chili powder
- 2 tsp. Cajun seasoning
- 1½ cups uncooked brown rice
- 2 lbs. pre-cooked Andouille sausage coin sliced
In the slow cooker, stir together the onion, garlic, celery, red pepper and spices.
Stir in tomatoes and broth.
Stir in brown rice until thoroughly combined.
Fold in sausage.
Cook on low for 7-8 hours.
