Salad Greens with Berries

For the salad:
- 6-8 cups spring mix
- 1 red onion thinly sliced
- ¼ cup dried cranberries
- 1 cup fresh strawberries sliced
- ¼ cup pecan halves
- 2 oz. goat cheese crumbles
- ½ lb. chicken breast grilled and sliced, optional
For the dressing:
- 1½ Tbs. raspberry all-fruit seedless preserves
- ⅓ cup olive oil
- ¼ cup red wine vinegar
- salt and pepper to taste
For the salad:
Combine the lettuce, onion, cranberries, strawberries, pecans, and goat cheese.
Add chicken, if desired.
Top, to taste, with dressing.
For the dressing:
Melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.
Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
