Salad Greens with Berries

Ingredients

For the salad:

  • 6-8 cups spring mix
  • 1 red onion thinly sliced
  • ¼ cup dried cranberries
  • 1 cup fresh strawberries sliced
  • ¼ cup pecan halves
  • 2 oz. goat cheese crumbles
  • ½ lb. chicken breast grilled and sliced, optional

For the dressing:

  • Tbs. raspberry all-fruit seedless preserves
  • cup olive oil
  • ¼ cup red wine vinegar
  • salt and pepper to taste

Instructions

For the salad:

  • Combine the lettuce, onion, cranberries, strawberries, pecans, and goat cheese.
  • Add chicken, if desired.
  • Top, to taste, with dressing.

For the dressing:

  • Melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.
  • Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
