oz. can
salmon
½
cup
whole wheat flour
¼
cup
cornmeal
2
eggs
beaten
½
small
onion
finely chopped
1
Tbs.
lemon juice
2
Tbs.
oil
for browning
Instructions
Pour the salmon into a mixing bowl, along with the liquid in the can.
Use a fork or pastry blender to mash the salmon and bones.
Stir in all the other ingredients.
If the mixture seems too wet, work in a bit more flour.
Shape into 6-8 patties.
Fry in oil in a skillet over medium heat, about 7-8 minutes on each side.
Notes
Remaining salmon can be frozen for future use.
