Salmon Patties

Ingredients

  • 15 oz. can salmon
  • ½ cup whole wheat flour
  • ¼ cup cornmeal
  • 2 eggs beaten
  • ½ small onion finely chopped
  • 1 Tbs. lemon juice
  • 2 Tbs. oil for browning

Instructions

  • Pour the salmon into a mixing bowl, along with the liquid in the can.
  • Use a fork or pastry blender to mash the salmon and bones.
  • Stir in all the other ingredients.
  • If the mixture seems too wet, work in a bit more flour.
  • Shape into 6-8 patties.
  • Fry in oil in a skillet over medium heat, about 7-8 minutes on each side.

Notes

Remaining salmon can be frozen for future use.
