Chocolate Chip Coconut Oatmeal Bars

Ingredients

  • ½ cup vegetable oil
  • 1 cup brown sugar
  • 1 egg
  • ¼ cup water
  • 1 tsp. vanilla
  • 2 cups whole wheat flour
  • ½ cup non-fat dry milk
  • ¼ tsp. salt
  • ½ tsp. baking soda
  • 1 tsp. cinnamon
  • 2 cups quick oats
  • ¾ cup chocolate chip
  • ¼ cup shredded coconut

Instructions

  • Mix the oil, brown sugar, egg, water and vanilla with a mixer.
  • In a separate bowl, stir together the flour, dry milk, salt, baking soda, cinnamon, and quick oats.
  • Add to the wet ingredients and mix until well blended.
  • Fold in the chocolate chips and coconut.
  • Grease and line a 9x9 pan with baking parchment.
  • Press the batter into the prepared pan.
  • Bake for 20- 30 minutes or until set and golden brown.
  • Let cool completely before slicing.

Notes

These can be made ahead and frozen. Wrap individual servings in plastic wrap and place in a large ziplock bag to freeze. Thaw on the counter overnight.
