Sausage and Mozzarella Calzones

Ingredients

For the filling:

  • 1 lb. ground sausage or beef
  • 1 onion sliced
  • 1 clove garlic minced
  • 15 oz. can tomato paste + 1 can water
  • salt & pepper to taste
  • basil to taste
  • oregano to taste
  • ½-1 cups mozzarella cheese the amount depends on how cheesy you like it

For the crust:

  • Tbs. dry yeast equivalent of 2 packets
  • 2 cups warm water
  • 2 tsp. sugar
  • ¼ cup oil
  • 5 cups whole wheat flour

Instructions

For the filling:

  • Brown the meat with the onion and garlic.
  • Drain the grease. 
  • Add the other ingredients and combine them well, letting them heat together for a few minutes.

For the crust:

  • Dissolve the yeast in the warm water.
  • Stir in the other ingredients Using a stand mixer for ease.
  • beat the ingredients until well mixed.
  • Let the dough rest 5 minutes. 

Assembly:

  • Spread half the meat mixture onto one side of the dough and add the cheese.
  • Fold the dough over the top and lift the whole thing up onto a baking stone or lightly greased cookie sheet.
  •  Bake at 425° for about 25 minutes.
  • Reduce cook time if dividing into smaller crusts.
