Sausage and Mozzarella Calzones

For the filling:
- 1 lb. ground sausage or beef
- 1 onion sliced
- 1 clove garlic minced
- 15 oz. can tomato paste + 1 can water
- salt & pepper to taste
- basil to taste
- oregano to taste
- ½-1 cups mozzarella cheese the amount depends on how cheesy you like it
For the crust:
- 1½ Tbs. dry yeast equivalent of 2 packets
- 2 cups warm water
- 2 tsp. sugar
- ¼ cup oil
- 5 cups whole wheat flour
For the filling:
Brown the meat with the onion and garlic.
Drain the grease.
Add the other ingredients and combine them well, letting them heat together for a few minutes.
For the crust:
Dissolve the yeast in the warm water.
Stir in the other ingredients Using a stand mixer for ease.
beat the ingredients until well mixed.
Let the dough rest 5 minutes.
Assembly:
Spread half the meat mixture onto one side of the dough and add the cheese.
Fold the dough over the top and lift the whole thing up onto a baking stone or lightly greased cookie sheet.
Bake at 425° for about 25 minutes.
Reduce cook time if dividing into smaller crusts.
