Scramble Egg-wiches with Spinach and Peppers

- 2 Tbs. butter
- 3 cups spinach
- 1 red pepper finely chopped
- 8 eggs
- salt and pepper to taste
- 8 english muffins
- 8 slices mozzarella cheese
Cook the spinach and pepper in butter until softened.
Pour in scrambled eggs.
Add salt and pepper to taste.
While the eggs cook, toast english muffins under the broiler.
Divide the eggs between 8 english muffin halves.
Top with cheese and pop it back under the broiler until the cheese melts.
Top with remaining halves.
