Scramble Egg-wiches with Spinach and Peppers

Ingredients

  • 1 Tbs. butter
  • cups spinach
  • ½ red pepper finely chopped
  • 4 eggs
  • salt and pepper to taste
  • 4 english muffins
  • 4 slices mozzarella cheese

Instructions

  • Cook the spinach and pepper in butter until softened.
  • Pour in scrambled eggs.
  • Add salt and pepper to taste.
  • While the eggs cook, toast english muffins under the broiler.
  • Divide the eggs between 4 English muffin halves.
  • Top with cheese and pop it back under the broiler until the cheese melts.
  • Top with remaining halves.

Notes

Notes: These can be made ahead and frozen. Wrap sandwiches individually in plastic wrap and place in a large ziplock bag to freeze. Thaw in the refrigerator overnight and reheat in the microwave or oven.
