Cobb Salad

- 6-8 cups lettuce spring mix
- 1 tomato large, diced
- 1 red bell pepper diced
- ½ cucumber diced
- 3-4 slices bacon cooked and crumbled
- ⅓ lb. grilled chicken breast diced, optional
- 1-2 hard-boiled eggs sliced
- 1 avocado sliced
- ½ cup buttermilk
- ¼ cup mayonnaise
- Kosher salt and freshly ground pepper to taste
- 2 tsp. white wine vinegar
- 1 tsp. garlic powder
- 2 Tbs. dried chives
Whisk together the buttermilk, mayonnaise, salt, pepper, vinegar, garlic powder, and chives.
Refrigerate until ready to serve.
In a large bowl, toss together the lettuce, tomatoes, red bell pepper, cucumber, bacon and chicken, if using.
Top with slices of egg and avocado.
Add dressing to taste and serve.
