Coconut Chocolate Chip Muffins

Ingredients

  • 2 cups flour
  • ½ tsp. salt
  • 1 Tbs. baking powder
  • ½ cup butter softened
  • ¼ cup sugar
  • 2 eggs
  • ¾ cup milk
  • 1 tsp. coconut extract
  • 1 cup mini chocolate chips

For the Streusel Topping:

  • ¼ cup coconut
  • 5 Tbs. sugar
  • 2 Tbs. butter
  • 2 tsp. cocoa
  • 5 Tbs. flour

Instructions

  • Stir the flour, salt and baking powder in a large bowl.
  • With an electric mixer, cream butter and sugar.
  • Add the eggs, coconut extract and milk and mix until well blended.
  • Stir wet ingredients into dry ingredients with a spoon.
  • Stir gently, just until combined.
  • Fold in the chocolate chips.
  • Fill greased muffin pan with batter.
  • Top with Streusel Topping before baking.

For the Streusel Topping:

  • Combine all the ingredients with a fork or your fingers to make crumbs.
  • Sprinkle the tops of the muffins with topping.
  • Bake at 400° for 15-20 minutes.
