- 2 cups flour
- ½ tsp. salt
- 1 Tbs. baking powder
- ½ cup butter softened
- ¼ cup sugar
- 2 eggs
- ¾ cup milk
- 1 tsp. coconut extract
- 1 cup mini chocolate chips
For the Streusel Topping:
- ¼ cup coconut
- 5 Tbs. sugar
- 2 Tbs. butter
- 2 tsp. cocoa
- 5 Tbs. flour
Stir the flour, salt and baking powder in a large bowl.
With an electric mixer, cream butter and sugar.
Add the eggs, coconut extract and milk and mix until well blended.
Stir wet ingredients into dry ingredients with a spoon.
Stir gently, just until combined.
Fold in the chocolate chips.
Fill greased muffin pan with batter.
Top with Streusel Topping before baking.
For the Streusel Topping:
Combine all the ingredients with a fork or your fingers to make crumbs.
Sprinkle the tops of the muffins with topping.
Bake at 400° for 15-20 minutes.
