Hearty Fruit & Cashew Salad

- 2 heads romaine lettuce
- 1 head broccoli chopped
- 2 apples chopped
- 1 cup cashews
- 2 pears chopped
- 1 red onion diced
- ½ cup dried cranberries
- ¾ lb. grilled chicken diced
- 3 Tbs. all fruit seedless raspberry preserves
- ⅔ cup olive oil
- ⅓ cup red wine vinegar
- salt & pepper to taste
Combine the lettuce, broccoli, apples, cashews, pears, onion, cranberries, and chicken, if using, in a large bowl.
Add dressing to taste and serve.
Melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.
Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
