Hearty Fruit & Cashew Salad

Ingredients

  • 1 head romaine lettuce
  • ½ head broccoli chopped
  • 1 apple chopped
  • ½ cup cashews
  • 1 pear chopped
  • ½ red onion diced
  • ¼ cup dried cranberries
  • lb. grilled chicken diced
  • Tbs. all fruit seedless raspberry preserves
  • cup olive oil
  • ¼ cup red wine vinegar
  • Salt and pepper to taste

Instructions

  • Melt the preserves in a small bowl in the microwave, 10 seconds at a time, stirring in between, just enough to blend it with the other ingredients.
  • Add the olive oil, red wine vinegar, salt and pepper and whisk to combine.
  • Combine the lettuce, broccoli, apples, cashews, pears, onion, cranberries, and chicken, if using, in a large bowl.
  • Add dressing to taste and serve.

Notes

Notes: Remaining broccoli and onion can be roasted as served as a side another night.
